Mini Chicken Crepes

I’m quite sore today. I ran 15 miles this morning with my friend this morning, and I’m feeling it!  My kids were supposed to be in California with my mom still (she took them to hang out at the beach because I was at camp all week), but the little stinkers wanted to come home early.  They had fun, but they missed me. (I missed them too)Wade and I only got 1 day home alone together (Saturday). But we had fun.  We saw Pirates of the Caribbean and went to an amazing Thai Restaurant, owned by one of my neighbors.  MMMMM!!!

Tonight though,with the kids home, and returning to normal, we had Crepes!  I’ve been craving them ever since Girls Camp, where we had them for breakfast! We had berries and yogurt inside, and they were super good.  So, I wanted to make some for dinner.  I still have some Rotisserie chicken that I used for the crepes. (second dinner in a row I’ve made with it!)

One thing that helps my family to enjoy the foods I make is to keep it simple! I only use a few ingredients for most of our meals.  This usually helps my kids to be more open to trying a new dish!

  • 16 ounce finely chopped mushrooms
  • 2 cloves garlic
  • 1 TBL Olive oil

Sauté mushrooms and garlic in the olive oil

  • 2 Cups chopped cooked chicken (I shredded a Rotisserie chicken and then chopped it more to be the same size as the mushroom pieces)
  • 1/2 tsp. salt
  • pinch of garlic powder
  • pinch of onion powder
  • 1/4 cup chicken broth, mixed with 1 TBL corn starch

Add chicken to mushroom/ garlic mixture.  Season with salt, garlic powder and onion powder.  Add chicken broth and stir till bubbly and saucy.  Add to crepes

  • 1 1/2 cups low fat milk
  • 2 eggs
  • 1 TBL canola oil

Mix well then add

  • 1 cup flour

Mix all ingredients very well until smooth.  For mini crepes, pour 1 TBL of batter onto greased hot griddle.  Move griddle around until batter is spread as much as possible.  Cook until it is heated through. You can flip, or just cook one side if it cooked all the way through.

The reactions:  My husband said, “This is crazy good!”
